Understanding Food is a textbook written for a hybrid science-for-arts undergraduate course. On the one hand, it deals with the scientific basis of our most fundamental human need: food. An understanding of the nature of food requires our attention to both chemical and biological knowledge. On the other hand, food in the modern world is the product of science-based industries for farming, preserving, processing, packaging and shipping. Much of the food we eat today would be unrecognizable by our ancestors. You are a lifelong consumer of food and it is to your benefit to know as much as possible about what you eat and what it does to your body. The book has been used by hundreds of students each year since 2007, and continues to receive very positive reviews by students at York University. The second edition is a 2021 update reflecting recent changes in Canada’s Food Guide, food labeling regulations and trade policies.  This edition has colour photos to take advantage of the eBook format.  In print, the book is 306 pages, including an extensive glossary and review questions at the end of each of the 11 chapters.
